Zucchini Feta Bruschetta

Ingredients
- 2 medium tomatoes
- 1 medium Zucchini
- 4 green onions
- 2 Tbsp. minced fresh basil
- 3 garlic cloves
- 2 Tbsp. lemon juice
- 1/2 cup crumbled feta cheese
- salt and pepper to taste
- toasted French bread (small slices) or crackers

Instructions
- In a large bowl, combine the tomato, zucchini, onions, basil and garlic.
- In a small bowl, whisk the lemon juice, salt and pepper. Pour over tomato mixture and toss to coat. Stir in cheese.
- Cover and refrigerate for at least 1 hour. Serve with toasted bread or crackers.
