Veggie Fried Rice

Ingredients
- 1 Tbsp. canola oil
- 1 Tbsp. sesame oil
- 2 cloves garlic
- 1 inch piece fresh ginger, grated or minced
- 3 large Eggs
- 4 cups brown rice, cooked
- 2 cups frozen peas and carrots
- 1/2 Tbsp. rice vinegar
- 2-3 Tbsp. low sodium soy sauce or use Tamari to make gluten free

Instructions
- Heat canola oil in a large pan or wok over medium heat. Add the garlic cloves and ginger and stir fry for 30-60 seconds. Crack the eggs directly into the pan and stir them for about 1 minute.
- Add the rice and stir fry for about 2-3 minutes; add the sesame oil and turn the heat up to medium-high.
- Add the frozen peas and carrots, vinegar and soy sauce and stir fry for another 1-2 minutes. Remove from heat and serve!
