Sweet and Sour Chicken

Ingredients
- 1 cup onion, chopped
- 1/3 cup sugar
- 1/3 cup ketchup
- 1/4 cup orange juice
- 3 Tbsp. cornstarch
- 3 Tbsp. cider vinegar
- 2 Tbsp. low-sodium soy sauce (or tarami for gluten free)
- 1/8 tsp. ground ginger
- 1 pound skinless, boneless chicken thights, cut into 1 inch pieces
- 2 (8 oz.) cans pineapple chunks in juice, drained
- 2 large bell peppers (any color) cut into 3/4-inch pieces
- 3 cups hot cooked brown rice

Instructions
- Combine ingredients through bell peppers in a slow cooker. Cover and cook on low for 6 hours or high for 4 hours.
- Serve over cooked brown rice.
