Roasted Rutabaga Chowder

Ingredients
- 1 cup diced rutabaga
- 1 cup diced carrots
- 1/2 tsp. salt
- 1/2 tsp. Pepper
- 3 Tbsp. olive oil
- 1/2 medium yellow or white onion
- 1 clove garlic
- 3 celery ribs diced
- 1 (14.5 ounce) can diced tomato
- 4 cups chicken stock
- 1 cup diced potatoes
- 1/2 tsp. ground cumin

Instructions
- Add diced tomato, chicken stock, potatoes, cumin and roasted vegetables and simmer until all vegetables are tender.
- Optional: Carefully remove half of the vegetables and puree until smooth in a blender or food processor and add back to soup. Check seasonings and adjust salt and pepper to taste.
