Ingredients
  • 1.5 pounds carrots
  • 1.5 pounds beets
  • 1.5 pounds potatoes
  • 2tablespoon olive oil
  • 1/2teaspoon salt
  • 1/4teaspoon Pepper
Instructions
  1. Preheat oven to 375 degrees.
  2. In a medium bowl mix all ingredients.
  3. Place mixture onto a sheet pan and roast for 15-25 minutes or until vegetables are tender and lightly browned.
  4. Add onion, garlic or other veggies for a twist!
