- 1 pound baby red potatoes
- 1 pound carrots
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. Black Pepper

Instructions
- Preheat oven to 375 degrees.
- Combine all ingredients in a bowl; toss well to season.
- Spread the mixture on an oven safe pan or cookie sheet, cook for 20-25 minutes or until vegetables are tender and slightly brown.
