Quinoa Pizza Bites

Ingredients
- 1 cup cooked (certified gluten free) quinoa
- 3 large Eggs
- 1 cup shredded mozzarella Daiya Mozzarella-Style Shreads for dairy free
- 1/3 cup turkey pepperoni, cut into small pieces
- 1/4 tsp. salt
- Pizza sauce (for dipping)

Instructions
- Preheat oven to 350 degrees. Spray 18 mini muffin tips with nonstick spray. Set aside.
- Combine all ingredients and transfer to mini muffin tins.
- Bake for 25-30 minutes or until browned. Immediately transfer to a cooling rack. Serve with pizza sauce for dipping.
