Potato Leek Chowder

Ingredients
- 3 cups low sodium chicken broth
- 3 cups 1% milk
- 1/2 cups diced leek
- 1/2 cups peeled diced carrot
- 1 cup unpeeled diced potato
- 1/4 tsp. salt
- 1/4 tsp. Black Pepper
- 1/4 tsp. dried parsley
- 4 Tbsp. cornstarch
- 4 Tbsp. water

Instructions
- Place all of the ingredients (except cornstarch & water) into a soup pot and bring up to a simmer.
- Cook uncovered for 20-25 minutes or until all the vegetables are tender.
- Mix the cornstarch and water together and stir. Whip cornstarch mixture into the soup. Cook for 3-4 more minutes then serve.
- Top with salt, pepper & a sprinkle of cheddar cheese, to taste!
