Pasta Carbonara with Fresh Greens

Ingredients
- 1 pound whole wheat pasta
- 1/2 pound bacon
- 1 large bunch collard or mustard greens
- 3 Eggs
- salt and pepper to taste
- 2 cloves garlic
- 1 Tbsp. olive oil
- 1 cup Parmesan cheese

Instructions
- Cook pasta according to package directions.
- Wilt greens in the pan that was used to cook the bacon.
- Meanwhile, combine 3 eggs in a mixing bowl and beat with 2 Tbsp. of the reserved bacon fat along with salt and pepper, set aside.
- Remove wilted greens and set aside; when they cool a bit, chop them up even finer.
