Orzo with Peppers & Spinach
  • 1cup whole wheat orzo pasta*
  • 1Tbsp. olive oil
  • 1 each medium sweet yellow, orange and red pepper, chopped
  • 1cup sliced fresh mushrooms
  • 3cloves garlic, minced
  • 1/2tsp. Italian seasoning
  • 1/4tsp. salt
  • 1/4tsp. Pepper
  • 2cups fresh baby spinach
  • 1/2cup Grated Parmesan Cheese
  1. Cook orzo according to package directions; drain. Meanwhile, in large skillet, heat oil over medium-high heat; sauté peppers and mushrooms until tender. Add garlic and seasonings; cook and stir 1 minute. Stir in spinach until wilted. Stir in orzo and cheese; heat through. Tip: Stir in toasted walnuts or cooked chicken for additional protein. *Can use any other whole wheat pasta of choice.
