Orzo with Peppers & Spinach

Ingredients
- 1 cup whole wheat orzo pasta*
- 1 Tbsp. olive oil
- 1 each medium sweet yellow, orange and red pepper, chopped
- 1 cup sliced fresh mushrooms
- 3 cloves garlic, minced
- 1/2 tsp. Italian seasoning
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 cups fresh baby spinach
- 1/2 cup Grated Parmesan Cheese

Instructions
- Cook orzo according to package directions; drain. Meanwhile, in large skillet, heat oil over medium-high heat; sauté peppers and mushrooms until tender. Add garlic and seasonings; cook and stir 1 minute. Stir in spinach until wilted. Stir in orzo and cheese; heat through. Tip: Stir in toasted walnuts or cooked chicken for additional protein. *Can use any other whole wheat pasta of choice.
