Honey Glazed Carrots

Ingredients
- 2 cups carrots (sliced coins or baby carrots)
- 2 Tbsp. honey
- 1 Tbsp. brown sugar
- 1 tsp. lemon juice
- chopped fresh parsley

Instructions
- Place about 3 inches of water in a saucepan, add carrots. Bring to a boil. Reduce heat, cover and cook carrots until tender.
- Meanwhile, combine honey, brown sugar & lemon juice in a small pan. Cook and stir until bubbly.
- Add carrots to sauce mixture and stir until well coated. Top with fresh parsley if desired.
