Greek Pasta Salad
Ingredients
  • 2 cups uncooked orzo pasta
  • 2 cups chopped cucumbers
  • 2 cups halved cherry tomatoes
  • 1 cup crumbled feta cheese
  • 1/2 cup thinly sliced red onion
  • 1/3 cup chopped fresh basil
  • 1/3 cup olive oil
  • 3 Tbsp. lemon juice
  • 2 tsp. Dijon mustard
  • 2 tsp. honey
  • salt & pepper to taste
Instructions
  1. Cook pasta according to package directions.
  2. In a large bowl toss together cooked pasta, cucumbers, tomatoes, feta, onions and basil.
  3. In a small bowl combine oil, lemon juice, mustard and honey; mix well.
  4. Just before serving, add the dressing to the pasta and stir until combined.
  5. Season salad with salt & pepper and serve immediately.
