In a food processor or blender, blend edamame, tahini, water, lemon juice, garlic, salt, pepper and 1 tsp. olive oil until smooth. Add more water if needed until consistency is smooth. Place in bowl and top with remaining 1 tsp. of oil. Serve as a tasty dip with your favorite vegetables!
