Country Style Whipped Potatoes and Parsnips

Ingredients
- 2 pounds potatoes
- 1 pound parsnips
- 2 Tbsp. Butter
- 1/4 cup skim milk
- 1/2 tsp. salt
- 1/2 tsp. Black Pepper

Instructions
- Wash all vegetables. Peel parsnips (if desired). Cut all vegetables into similar sized large pieces.
- Place into a pot and cover with cold water. Bring to a boil then reduce the heat to a simmer. Let simmer for 15-20 minutes until fork tender. Drain.
- Add the milk then whip together using a mixer. Add the butter and seasonings and enjoy!
