Citrus Carrot Slaw

Ingredients
- 1 pounded shredded or matchstick carrots
- 1 Tbsp. olive oil
- 1 tsp. lemon zest and 2 Tbsp. lemon juice, from 1 lemon
- 3 Tbsp. orange juice
- 2 Tbsp. honey
- 1/2 cup dried cranberries
- 3 green onions, thinly sliced
- 3 Tbsp. fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 cup chopped walnuts, toasted

Instructions
- In a large bowl, combine all ingredients except walnuts and toss well.
- Cover and refrigerate at least 2 hours to allow flavors to blend.
- Season to taste with additional salt, pepper, honey or citrus. Toss in walnuts and serve.
