Add beets to blender, and puree. Add eggs, oil, applesauce, vanilla and sugar to blender. Blend on low until combined. Add all remaining ingredients and blend until just combined. Pour into a greased 9x13 pan and cook about 30 minutes, or until a toothpick inserted into the center comes out clean. Frost as desired, or sprinkle with powdered sugar, melted chocolate or a berry coulis! Enjoy!
