Butternut Squash Soup

Ingredients
- 1 1/2 cup chopped onion
- 1 Tbsp. olive oil
- 8 cups butternut squash
- 3 cups water
- 2 tsp. ground black pepper
- 8 ounces reduced-fat cream cheese
- 1/4 cup honey

Instructions
- Add squash, water, and black pepper. Bring to a boil; reduce heat, then simmer 20 minutes or until squash is tender.
- Puree squash, cream cheese and honey in a blender or food processor in batches until smooth.
- Return to sauce pan and heat through. Do not boil.
